Chocolate Peanut Butter Cookies

After having a rough week, I decided I needed some baking therapy. I needed baking therapy that ended in me eating something chocolate-y. Maybe multiple chocolate-y items. Yes, it had a very rough week. So when I saw these cookies on Lawyer Loves Lunch, I jumped on the chance to make them. I substitutes peanut butter chips for mint, because well... that's how I roll. They are so quick and easy to make. I should warn you though, these cookies are fantastic and very addictive. You may want to break out your fat pants. (Don't pretend you don't own fat pants, I know you do)

Chocolate Peanut Butter Cookies

Chocolate Peanut Butter Cookies. Ignore the
 weird shapes, they are FANTASTIC
1 cup butter, softened
1 1/2 cups white sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon salt
2 cups peanut butter


Preheat oven to 350 degrees F.

In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.

  1. So glad you made these! The hubster is a huge fan of peanut butter so I will have to give your version a go as soon as I get my paws on some peanut butter chips :)

    PS: Sadly, my fat pants are my regular pants these days :)

  2. My hubby HATES pb, so I had to eat them all myself. Oh darn.... :P That's totally normal post baby!
