Sleep and the best burgers ever


Rania no longer sleeps through the night. It make me frustrated and leaves us all exhausted. Monday night she woke up twice. I was so exhausted I couldn't drag myself out of bed. I nudged my darling husband, who after some groaning dragged himself to Rania's room. We normally take turns tending to Rania's nighttime needs. Not that night. I slept through the next waking. Arslan went to check on Rania again. Only this time she didn't want to go back to sleep. It was  6 am. He stayed up with her until I finally woke up at 8:30am.

I felt terribly guilty the next morning and decided to make Arslan a little treat to thank him. So, I whipped up a batch of these yummy hamburgers. I've worked on this recipe over several summers and I think I finally nailed it. Arslan called these "the best burgers ever". Hurrah!

Best Burgers Ever
1 lb ground beef
The best burger ever. Yum!
1 jalapeno, diced finely (de-seeded if you want it more mild)
4 tbsps adobo sauce from a can of chipotles in adobo 
2 scallions, chopped
2 tbsp salt
1 tsp pepper
4 oz pepper jack cheese, sliced

Combine all the ingredients but the cheese in a large bowl. Mix thoroughly. Marinade on the counter for 20-30 minutes. Divide the meat into 8 portions. Make a large very thin patty from each portion. Lay 1 oz of cheese in the center of a patty. Top with another patty and pinch the edges. No cheese should be poking through. Do this 4 more times. Heat your grill to medium heat. Grill the patties approximately 10 minutes on each side, or until they are golden brown. Remove from heat and allow the burgers to rest for a few minutes while you prepare the fixings. Top with a bun and enjoy!

Note: You can also make these in them oven (blasphemous I know).
