Thanksgiving is about more than food and good sales. It's about taking a moment to be thankful for all the blessings God has bestowed upon you. I think sometimes we get so caught up in our daily lives that we forgot how lucky we are.
I am thankful for my beautiful, amazing daughter and my supportive family. The last year would have been impossible without the support of my parents and wonderful husband. I am also thankful for the roof over our heads and the blessings Allah bestows upon us every day. I am a lucky girl, MashAllah.

Turkey Pesto Panini
4 leftover rolls (or whatever bread you have on hand)
1/2 cup of shredded turkey meat
4 tbsp pesto
4 slices of provolone or mozerella
1 tomato, thinly sliced
Cooking spray
Preheat panini maker or nonstick pan. Split the rolls in half. Spread one side with a tbsp of pesto. Stack turkey, one slice of tomato, and one slice of cheese on top. Put the other half on top of the sandwich. Spray panini maker or nonstick pan with cooking spray. Place sandwich inside panini maker (or on pan and press with spatula, flipping the sandwich over after 2 minutes). Allow to cook for 2-3 minutes, or until both sides are crispy and brown. Remove from heat and enjoy!
You could also put artichoke hearts or spinach inside these and that would really yummy!
